Banana Pudding (From Scratch!!)

1/2 cup sugar
3  egg yolks
Dash Salt
2 tablespoons cornstarch
2 cups milk
1 teaspoon vanilla
4 bananas
1 box vanilla wafers
 whipped cream or cool whip

In a double boiler, whisk the sugar, yolks, cornstarch and salt together.  Add milk and whisk well.  Heat on stove until the pudding sticks to the side of the saucepan, approximately 20 minutes or so.  After mixture has thickened, add vanilla.  Remove from heat and let cool.  (I like lots of pudding, so I make a double batch!)

Line a 9 x 13 glass dish with vanilla wafers.   Slice 2 bananas over the wafers.  Top with pudding.  Repeat.  After your second layer, top with whipped cream or cool whip.

Store in refrigerator.








Banana Energy Bars
1/2 cup mashed ripe banana (about 2)
1/3 cup packed brown sugar
1/4 cup honey
1 tablespoon vegetable oil (use applesauce instead to make fat free)
1/2 teaspoon vanilla extract
1 large egg
1/2 cup all-purpose flour (I use whole wheat flour)
1 1/4 cups multigrain hot cereal (I use Quaker - yellow package) OR quick cooking oats
1/4 chopped pecans 
1/2 teaspoon salt
cooking spray

Preheat oven to 350 degrees.

Beat first 6 ingredients at medium speed until blended.  Lightly spoon the flower into a dry measuring cup and level with a knife.  Gradually add the flower, cereal, pecans, and salt to the banana mixture, stirring until well blended.  Spoon mixture into an 8-inch square baking pan coated with the cooking spray.  Bake for 25 minutes.  Cool completely on wire rack.  Cut into 12 equal bars.

Add ground flax seed and craisins or chocolate chips.

Chicken Vegetable Soup

2 lbs. Fresh Chicken Tenders
4 cups Water
3 stalks Celery, sliced
1 med Onion, diced
1 clove Garlic, minced
Salt & Pepper - to taste
1 bag Sugar Snap Pea Stir Fry
1 cup Brown Minute Rice
1 lg can Chicken Broth

Add first 5 ingredients to large stockpot and bring to a boil over high heat to cook the chicken.  When chicken is done, reduce heat to medium.  Add remaining ingredients and let cook at least 10 minutes.  When rice is done, reduce to simmer until you are ready to eat.


ZESTY SOUTHWEST SALAD  (this makes 2 BIG salads)


9 boneless, skinless chicken breast tenders
salt
pepper
chili powder
cayenne pepper
ground cumin


Rinse off the chicken meat and sprinkle each of the seasonings to taste.  I cooked them up on my George Foreman grill, but you can do it anyway you like.  Just don't overcook the meat.


When they were done, I cut them up in bite sized pieces.


In each bowl I put:


Spring Mix lettuce mix
slices of red onion
1/2 sliced honeycrisp apple
dried cranberries
real bacon pieces
chopped pecans
feta crumbles
black beans (Bush's, out of the can, drained & rinsed)
snow peas (cut up into bite-sized pieces)
Texas Toast brand chipotle cheddar tortilla strips
cut up chicken


Toss well, top with Hidden Valley Ranch Spicy Ranch (with chiles and select herbs)
